Malabar chemmeen biriyani / Prawn biriyani Kerala style

Again with a delicious flavourful biriyani recipe.it was a super hit in my home and I served with onion raita.Heard that coconut chutney will do wonders with prawn biriyani! But I never got a chance to taste it.You can use any kind of prawns for this biriyani.

Ingredients :

Serving size : 4-6

For rice :

  • Basmati rice : 3 cups
  • Water : 4.5 cups
  • Onion sliced : 1/2 cup
  • Cinnamon : 1 stick
  • Cardamom : 5
  • Clove : 4
  • Lemon juice : 2 tspn
  • Salt : As required
  • Ghee : 1/4 cup

For masala :

  • Prawns : 1/2 kg
  • Chilly powder : 2 tspn
  • Turmeric powder : 1/4 tspn
  • Coriander powder : 1 tspn
  • Garam masala powder : 1 tspn
  • Onion sliced  : 3 big
  • Tomato chopped : 1 big
  • Coriander leaves chopped  : 1/2 cup
  • Mint leaves chopped : 1/2 cup
  • Ginger : 2' piece
  • Garlic : 8-10 cloves
  • Green chilly : 2
  • Salt

To garnish :

  • Fried cashews : 10 
  • Fried raisins : 10
  • Ghee : 1 tspn 
  • Garam masala : 1/2 tspn
  • Coriander leaves chopped : 1/2 cup
  • Mint leaves : few

Method:


Rice :

  • Wash and soak basmati rice for 20 minutes.Drain it and keep aside.
  • Heat a pressure cooker with ghee.
  • Add cinnamon cloves and cardamom.Fry it for few seconds.Now add sliced onion.
  • Saute it well 

  • Add drained rice.
  • Fry it for few seconds and add 4.5 cups of water.
  • Now add lemon juice and salt.Mix it well and close the cooker .
  • Keep the cooker in high flame for one whistle.Switch off the flame and when the pressure subsides open it.



Masala:

  • Marinate the cleaned prawns with turmeric powder salt and chilly powder.Keep it in refrigerator 30 minutes
  • Now heat a pan with oil.Add marinated prawns and fry it.Drain it and keep aside.
  • To the same pan add sliced onion and saute it well.Add salt too


  • Now add chopped tomato and saute it again
  • Make a paste of ginger garlic and green chilly and add it in to the sauteed onion
  • Mix it well and saute it till it leaves the raw smell.

  • Now add garam masala and coriander powder to it.Mix it well
  • Add chopped coriander and mint leaves.
  • Add fried prawns to it.Mix it well.
  • Add 1/4 cups of water to the masala and cook it in low flame for few minutes.
  • Check for salt.Keep it aside.

How to make dum:

  • This time I ued my pressure cooker to dum 
  • Grease your biriyani pot /cooker with ghee
  • Add one layer of prawn masala
  • Next add one layer of rice



  • Now add chopped coriander and mint leaves,fried cashew and kismis and finally fried onion too
  • Sprinkle some garam masala too
  • Repeat the process for remaining rice and prawn masala.
  • Finally on the top add some mint leaves too
  • Close the cooker with its lid without weight (if you are using biriyani pot seal it with maida Refer :how to do dum )
  • Keep it on a hot thawa.
  • Simmer the stove and dum it for 20 minutes.
  • YUmmy prawn biriyani is ready !!!! Serve it with raita pickle and papad




Note :

  • You may use jeerakashala rice for this biriyani
  • By mistake before adding spice powders i added mint and coriander leaves.
