Beetroots are rich in folic acids and minerals. My hubby is a die hard fan of beetroots .Whenever he goes to the market, he buys kilos of beetroots without fail !!! So this vegetable is an inevitable part of our family's diet. Though i dont like the taste of beets much, i somehow try to consume it in the form of beetroot stir fry . I usually add more lemon juice and water during the preparation to suppress the beetroot taste.
Ingredients:
- Beetroot : 1 small
- Ginger : 1/4 " piece
- Lemon : 1
- Sugar : 2 tblspn
- Water : as required
- Ice cubes
Method:
- Peel the beetroot and cut it into small pieces.
- Grind it in a mixer with sugar and ginger piece.
- Add enough water and strain it
- Add lemon juice and mix it well.
- Add ice cubes while serving.
Healthy indeed.
