Cheera thoran / Red spinach stir fry

A healthy stir fry for lunch!Amma used to serve cheera thoran with mambazha pulissery and pickle..oh drooling...My all time favourite lunch menu...

Ingredients :

  • Spinach chopped : 3 cups
  • Turmeric powder : 1/2 tspn
  • Chilly powder : 1 tspn
  • Salt

To crush :

  • Grated coconut : 3/4 cup
  • Shallots : 5-8
  • Garlic : 1 clove
  • Cumin seeds : 1/4 tspn

To temper :

  • Mustard : 1/4 tspn
  • Raw rice : 1/2 tspn
  • Curry leaves : few
  • dry red chilly : 1

Method : 

  • wash and clean the spinach and chop it.Keep aside.
  • Heat a pan with oil.Add mustard and let it splutter.Now add raw rice ,dry red chilly and curry leaves.
  • Add cleaned and chopped spinach turmeric powder ,chilly powder and salt.
  • Mix it well and close the pan with its lid.Keep the stove in simmer mode.

  • Meanwhile crush the ingredients listed under "to crush ".Add it to the pan and mix it well with spinach.
  • Keep the stove in low flame

  • Yummy red spinach stir fry is ready to serve!
