Again a simple and easy to prepare recipe...This is a less spicy curry with a lovely flavour.If you don't like to add egg simply avoid it :).

Ingredients :
- Hard boiled eggs : 4
- Onion sliced : 1 big
- Potato cubed : 1 medium
- Carrot cubed : 1 medium
- Green peas : 1/4 cup
- Green chilly slited : 4
- Ginger garlic paste : 1 tablspn
- Coriander powder : 2 tspn
- Garam masala powder : 1 tspn
- Thick coconut milk : 1 cup
- Curry leaves : few
- Salt
- Oil
Method:
- Cook all the veggies with enough water,green chilly and salt.Keep aside.
- Heat a pan with oil.Add sliced onion.Saute it well until it turns golden brown colour.
- Now add ginger garlic paste and saute it well.
- Add coriandr powder and garam masala.Mix it well.
- Now add cooked veggies to it.
- Add thick coconut milk and mix it well
- Add hard boiled egg and close the pan.Keep the stove in low flame and cook it for 5 minutes.
Note:
- You can serve this curry for 4 persons.(I used only 2 eggs)
- I cooked veggies in water.You may use thin coconut milk.
