Egg and vegetable curry

Again a simple and easy to prepare recipe...This is a less spicy curry with a lovely flavour.If you don't like to add egg simply avoid it :).

Egg and vegetable curry

Ingredients :

  • Hard boiled eggs : 4
  • Onion sliced : 1 big
  • Potato cubed : 1 medium
  • Carrot cubed : 1 medium
  • Green peas : 1/4 cup
  • Green chilly slited : 4
  • Ginger garlic paste : 1 tablspn
  • Coriander powder : 2 tspn
  • Garam masala powder  : 1 tspn
  • Thick coconut milk : 1 cup
  • Curry leaves : few
  • Salt
  • Oil

Method:

  •  Cook all the veggies with enough water,green chilly and salt.Keep aside.
  • Heat a pan with oil.Add sliced onion.Saute it well until it turns golden brown colour.
  • Now add ginger garlic paste and saute it well.

  • Add coriandr powder and garam masala.Mix it well.
  • Now add cooked veggies to it.




  • Add thick coconut milk and mix it well
  • Add hard boiled egg and close the pan.Keep the stove in low flame and cook it for 5 minutes.



Note:

  • You can serve this curry for 4 persons.(I used only 2 eggs)
  • I cooked veggies in water.You may use thin coconut milk.
