Liver roast / Karal Olarthiyathu / Kerala style spicy liver roast


Delicious side dish for non veg lovers. it will go well with roti rice appam or even with idly .

Ingredients :

  • Liver (mutton / beef ) : 1/4 kg
  • Onion chopped : 1
  • Ginger : 1/2 " piece
  • Garlic : 6-8 cloves
  • Fennel / perum jeerakam : 1/2 tspn
  • Turmeric powder : 1/2 tspn
  • Garam msala powder :  1/2 - 1 tspn
  • Coriander powder : 1 tspn
  • Chilly powder : 1/2 tblspn
  • Pepper powder : 1/2 tspn
  • Curry leaves : 2 springs
  • Salt
  • Oil

Method :

  • Soak liver in water with one teaspoon of vinegar and turmeric powder.Let it be there for half an hour
  • Cut liver in to small pieces.
  • Now wash it well for two three times,drain and keep aside.
  • Heat a pan with oil.Add fennel and curry leaves.
  • Now saute chopped onion  and ginger garlic paste 

  • Now add turmeric ,chilly pepper ,coriander and garam masala powders and mix it well.
  • Add in liver pieces.
  • Mix it well and add salt and enough water.
  • Close the pan and cook it in medium flame.
  • When it reaches to the right consistency remove from the stove. 

  • Delicious liver roast is ready to serve

Notes :

  • You may pressure cook liver and then add to the onion to save time.
  • Adjust spice level by adding or reducing pepper powder and chilly powder.

  1. Hi Remmy, Happy New Year! Interesting recipe. Though I'm not a beef liver eater, this might also work nicely using chicken livers.
