A healthy stir fry for lunch!Amma used to serve cheera thoran with mambazha pulissery and pickle..oh drooling...My all time favourite lunch menu...
Ingredients :
- Spinach chopped : 3 cups
- Turmeric powder : 1/2 tspn
- Chilly powder : 1 tspn
- Salt
To crush :
- Grated coconut : 3/4 cup
- Shallots : 5-8
- Garlic : 1 clove
- Cumin seeds : 1/4 tspn
To temper :
- Mustard : 1/4 tspn
- Raw rice : 1/2 tspn
- Curry leaves : few
- dry red chilly : 1
Method :
- wash and clean the spinach and chop it.Keep aside.
- Heat a pan with oil.Add mustard and let it splutter.Now add raw rice ,dry red chilly and curry leaves.
- Add cleaned and chopped spinach turmeric powder ,chilly powder and salt.
- Mix it well and close the pan with its lid.Keep the stove in simmer mode.
- Meanwhile crush the ingredients listed under "to crush ".Add it to the pan and mix it well with spinach.
- Keep the stove in low flame
- Yummy red spinach stir fry is ready to serve!
