                        Beetroot thoran/Beetroot stir fry












                               Beetroots are rich in vitamins carbohydrates protein and antioxidants.Beetroot is well        known for its power to lower blood sugar.Beetroot stir fry is a tasty side dish and it is good with rice.


Ingredients:


Beetroot(grated):3 medium sized
Shallots/Kunjulli:7
Grated coconut:1/4 cup
Chilly powder:1 tspn
Turmeric powder:1/4 tspn
Mustard seeds:1/4 tspn
Urad dal:1/4 tspn
Dry red chilly:2
Curry leaves
Salt
Oil

Method:


  • Heat the pan with oil.
  • Add mustard seeds and let it splutter.
  • Add urad dal,dry red chilly and curry leaves.
  • Add grated beetroot and stir well.
  • Add chilly powder,turmeric powder,and salt.
  • Mix all the ingredients well and close the pan with the lid.
  • Cook it in low flame (if you are not confident add 1 table spoon of water)
  • Meanwhile crush the grated coconut and shallots together.Keep it aside.
  • Wait for few minutes and add Crushed coconut.Stir it well.
  • I will make it in dry form it will increases the taste.
