Eggless Coffee Cake With Butter Cream Icing
It
is a different cake with super taste.I tried butter cream frosting
also.Actually this is my first trial with coffee.
Ingredients:
Maida:1 cup
Coffee powder:1 tspn(I used Sunrise)
Powdered sugar/icing sugar:1cup
Butter:3/4 cup(I used Amul salted butter)
Milk:1/2 cup
Baking soda:1/4 tspn
Vanilla essence:1/4 tspn
For icing:
Butter:100gm(I used Britania unsalted butter)
Powdered sugar/icing sugar:1/4 cup
Amul fresh cream : 1/2 cup
Amul fresh cream : 1/2 cup
Milk:2tspn
Vanilla essence:1/4tspn
Method:
- Sieve Maida and baking soda together.
- Mix milk, powdered sugar, vanilla essence and butter by using a hand mixer.(I used my food processor).Mix it well.
- Add Sieved maida and baking soda mixture and mix it well.
- Add coffee powder mixed in 1tspn hot water and mix it well.
- Grease a cake tin with butter and pour the cake mixture.
- Keep it in a preheated pressure cooker (remove whistle and gasket).
- Cook it in low flame. Within 40,45 minutes yummy cake is ready.
- Check it with a tooth pick if it comes out clean cake is ready.If you are using oven bake it in 350F for 30 to 40 minutes.
- Keep it aside.
For icing:
- Mix butter ,vanilla essence and powdered sugar.
- Add 2 tspn milk and mix it again.
- Add fresh cream and mix again
- Keep it in fridge at least for 10 minutes before applying to the cake.
- Using a knife or spoon apply icing carefully.Make sure that the cake should be cool
